Job Description:

This position is open ONLY to Shakopee High School CAPS participants.

 

Job Summary:

Learn cooking techniques, as well as the daily operations and work flow of various Gaming Enterprise restaurant kitchens.

Status:
Intern (non-paid, part-time position)

Primary Duties and Tasks:

Utilize restaurant specific cooking techniques and knife skills according to set performance & safety standards

Assists with daily setup and food preparation for items such as soup, sauces, cold prep

Learns various line stations including broil, fry, sauté, pantry.

Completes dishwashing tasks according to established sanitation standards

Maintains cleanliness and order of kitchen equipment and assigned work station
Abides by Shakopee Mdewakanton Sioux Community Gaming Enterprise and Food & Beverage department policies and procedures
Other duties as assigned

Qualifications and Knowledge
Experience:
* Passionate about food and curious to learn about new techniques, ingredients and tools
* Interest in the customer focused hospitality industry
* Demonstrated record of successful involvement working on a team
* Able to follow instructions and work independently
* Comfortable following policies, regulations, laws
* Willing to work in an assigned uniform in a physically demanding environment, commonly standing, moving and in temperature variations
* Certified slip resistant shoes are a requirement of this position. The uniform (aside from slip resistant shoes) is provided by the SMSC.

Possible projects include:
1) Short order cooking
o Cook breakfast items such as eggs to order
o Prepare hot and cold sandwiches
o Cook steaks and seafood

2) Menu design
o Assisting Sous Chefs in creating daily specials with products on hand

3) Sanitation
o Learning proper maintenance and operation of a dish machine
