Job Description:

Areas of Responsibility:

Food and Beverage Administration


Job Summary:

Responsible for completing special projects including research, analysis of policies and procedures, documenting specific issues and providing recommendations. Maintains and updates department systems for recipes and payments. Supervising administrative staff. Assists Director with all tasks and projects within the culinary and front of house operations.


Budget/Asset Responsibilities:

Assist Director with monitoring of the annual budget.


Job Duties:

  1. Completes special projects including research, analysis of policies and procedures, documenting specific issues and providing recommendations. Performs advanced, diversified and confidential administrative support.
  2. Supervise administrative staff within Food and Beverage. Plans and prepares work schedules and assigns duties to staff to ensure efficient operation of department. Interviews, selects, hires, and promotes team members. This includes training, developing, performance management, disciplinary actions and terminations.
  3. Reviews and approves drafts and final designs for Food and Beverage marketing projects.
  4. Maintains and updates Food and Beverage recipe system. Enters new recipes and updates existing recipes in the system. Costs food and beverage recipes for outlet menus and banquets.
  5. Maintains Micros programming for Food and Beverage outlets. Creates and maintains Food and Beverage analytical reports.
  6. Monitors department budget. Reviews monthly profit and loss statement including variances by restaurant. Reviews and monitors budget, including weekly payroll and tip reports by restaurant.
  7. Assist Director with preparation of the annual budget. Responsible for overseeing department purchasing. Orders department supplies and other materials.
  8. Receive, review and process invoices, check requests, expenses and other payment requests and track payments against the budget to ensure fiscal responsibility. Enters Food and Beverage invoices into the Purchasing system.
  9. Occasional Tasks

Requirements:
  1. Any combination of post-secondary education and/or experience in business administration, hospitality management or related field to equal five years and 2 years of supervisory experience.
  2. 2 years Food and Beverage operational and/or POS experience required.
  3. Advanced proficiency (ability to create and develop complex files and reports) in word-processing, spreadsheets, meeting presentations, database, and electronic mail software. 
  4. Excellent verbal and written communication skills.
  5. Must possess excellent organizational and administrative skills.
